9 lasagna noodles, cooked according to package instructions.
2 cups ricotta cheese.
2 cups mozzarella cheese, shredded.
1/2 cup Parmesan cheese, grated.
INSTRUCTIONS ON HOW TO COOK VEGETARIAN LASAGNA?
Preheat oven to 375°F.Heat olive oil in a large skillet over medium heat.
Add garlic, zucchini, bell peppers, mushrooms, and onion. Cook until vegetables
are tender, about 5 minutes. . Add diced tomatoes, tomato paste, oregano,
basil, salt, and pepper. Simmer for 10 minutes. Spread 1/3 of the vegetable
sauce in the bottom of a 9x13-inch baking dish. Top with 3 of the lasagna
noodles.
